from now on i might as well look at the world from a different angle ...


so what do you think of my new glasses? i ordered sunglasses with correction the other day and got a free pair of glasses with it. i could not say 'no' to that! and i do like them. the world is somehow less diamond-shaped now ... ?

other than that i am waiting for the cheesecake in the oven. when for his birthday my boss wished for a cheesecake i started researching recipes and kept experimenting. i have this great old family-tradition-recipe from my mom, but i figured since i am already in the States i might as well try out something new. i am pretty stoked about the one that is just about to bake. i got it from an ayurvedic cookbook. here you go, try it! it promises fresh summer bliss.

LEMON-YOGURT-CHEESECAKE

1. make the crumb crust (9-inch/23cm pan)
  • 1 1/4 cups (125g) finely crushed graham crackers or cookie crumbs (die graham crackers sind honigkekse, ihr herzchen). i crush them pretty well smashing them with a bowl on a cutting board. i've got a crush on graham's, oi oi oi
  • for the sake of variety, you could replace a quarter of the crackers with 1/2 cup (30-60g) ground nuts
  • 3 1/2 tablespoons melted butter or coconut oil. really, take the latter, it is so tasty, so much better for you and adds this tropical hint to the crust.
  • 2 tablespoons raw or brown sugar
-> mix all evenly together and press into pie pan. you have to work this quickly, so the oil/butter does not go back to stiff. at this stage, i am reminded of childhood days at the beach to be honest ... pour sand in pan, spread evenly about waving fingers lightly, and press sand down to firm ...

2. mix the lemon-yogurt filling
  • 3 cups (720ml) plain yogurt
  • 3 tablespoons starch. i use tapioca, but you might as well stick to traditional corn, not as healthy though.
  • 1/2 cup (100g) sugar, raw or brown
  • finely grated zest of one organic lemon
  • combine all these in blender until smooth and pour into crumb crust pan
3. then bake
  • in preheated oven to 350˚F/180˚C
  • 'til lightly browned in a few places, about 50-60 min
  • wash dishes and clean up the mess after you while baking :)
  • chill 'til firm and enjoy, and as usual feed to people you like.
okidoke, i'm off again. cake is out, looks great, and there is no more use for me spending this lovely summer day inside. time to try out the sunglasses i guess. ciaoi.
